Northern Lapland supplies this kitchen: reindeer meat, fell berries and fish from the waters of the district. Kiruna sits far above the Arctic Circle, where field farming is not a practical proposition, so the support is what the open fell and the lakes give rather than what any plough turns over.
Who grows or catches it
Sami reindeer herders raise and manage the herds across these lands, as they have for generations, and berries are picked from open ground under the Swedish right of access. Fish comes from lakes and rivers in the district. The camp buys from these northern producers rather than working land of its own.
What travels furthest
Almost everything else comes up from the south along a single main road and the ore railway, and the journey is long. Vegetables, grain, dairy and coffee all travel the length of the country before they reach a kitchen this far north.

Everything from a warm climate travels the full length of Sweden and further: coffee, fruit, most vegetables and grain. A camp on frozen water keeps no store and no growing ground, so supply comes out with the crew each time.
